Easter Brunch

I love Easter. In addition to appreciating the religious part of it, I feel it’s just a great start to the spring. We’ve had a longer (and snowier) winter than usual, so I always look forward to Easter to bring forth spring!

Since my hubby is Catholic and I’m Eastern Orthodox, we celebrate Easter twice. ((The boys are lucky and get visited by the Easter Bunny twice)) Generally for Catholic Easter we celebrate with my family at my sister’s house and then follow with my husband’s family. But Orthodox Easter (or Greekster as some have called it haha) is at my home! My mom used to host it, but once I moved out I stole it from her (as well as Christmas Eve). She’s ok with it though, because she knows I love to host, and I think I do a pretty good job! My grandmother tells me I do and she’s a tough critic.

Anyway, this year I decided to host a brunch. This was for several reasons: brunch fare is sooooooo much lighter than dinner, I didn’t want to cook a whole leg of lamb, and it would (theoretically) mean I could get everyone out of the house sooner so the boys could nap and not turn into monsters. As you can guess, this last idea, although great in theory, did not come to pass, and my poor toddler was so overtired and grumpy to the point I had to basically yell at everyone that he is tired and needs his friggin nap!

As usual, I made too much food, but I learned from my grandma! Luckily I was able to make most of the stuff in advance (a surefire way to make the day alot less stressful!) and just reheated about a half hour before everyone arrived. I think I only made 2 things that morning- the lamb chops lollipops and goat cheese and asparagus tart (but those were so easy so it was ok). Overall, we had:

– colored eggs
– lamb chops lollipops
– goat cheese and asparagus tart
– spinach and gruyere frittata
– Dijon and dill baby potato salad (no mayo)
– orzo, chickpeas, goat cheese, cucumber, and dill salad (recipe found HERE – I subbed goat cheese for feta)
– fresh mozzarella, tomato, and basil salad with balsamic vinaigrette
– ground beef pastries and cheese pastries courtesy of my grandma

Yea. Lots of food! And this doesn’t include dessert 😂😂
